In a bowl, stir together
2 cups quick-cooking oats
pinch of salt
1/3 cup maple syrup
1/3 cup hot water
1 cup okara

and mix until the okara is well incorporated. Pour this mixture into a lightly oiled 8"-by-8" pan and press down until you have flat oatmeal layer.

In a bowl (the same bowl as before, if you like), mix together
1 1/2 cup chocolate chips
3/4 cup finely chopped walnuts, pecans, or a combination of both
1/3 cup maple syrup
1 1/2 cup unsweetened shredded coconut
1 Tablespoon corn starch

and stir until all ingredients are well incorporated. Transfer this mixture to the pan and spread it out over the oatmeal layer to create a second, chocolate/coconut layer.

Bake for
350 degrees Fahrenheit
for 20 to 22 minutes. Remove from oven and cut into squares while still warm. Allow to cool to room temperature before serving.

  1. Dear Anna, You recipes look amazing and your motivation is similar to mine: making my own soy milk and haven't the heart to compost the okara. But alas, I am vegan and GF. Do you have any other gluten free recipes for baked goods or other dessert type items. Also, I usually make the milk using soy, plus coconut shred, plus nuts - most often cashews. So far it's been lots of patties. Any suggestions gratefully appreciated! Thanks!

  2. Thanks! I don't bake gluten-free on purpose and really don't know anything about it, other than there are GF flour mixes you can buy or make, and use as a substitution in recipes calling for wheat flour. I don't really have any tips, other than to try those substitutions ... Sorry!

  3. I tried this recipe with almond okara. However, I removed coconut because I don't like it. This oatmeal bar are so GOOD !!

  4. I omitted the nuts since I didn't have any but the recipe was still scrumptious! Thank you for this recipe on how to use leftover okara ! :)

  5. Dear Anna, thank you so much for the inspiration. I had some blueberries that I needed to use so I subbed them for the chocolate chips. My husband and I love the result! I can't wait to try your other recipes!
